Fool’s Gold cocktail : Sip pine lime white rum through vanilla cream.

 

Fool’s Gold is a love child conceived the fateful evening Pina Colada, our exotic chanteuse, glanced up from her microphone to catch the lingering gaze of district larrikin, PineLime Splice.

The product is a light, vanilla crema floating over chilled pine lime tang.

Cream is created by enzymes in pineapple that foam when blended and take up the vanilla flavour.

You can drink Fool’s Gold all night. No dairy. No coconut cream. The perfect Pina Colada alternative.

Recipients: Guests who like a pina colada without the heavy cream.

Type: Frozen and blended

 

EQUIPMENT

Blender

Cocktail martini glass or margarita glass

 

INGREDIENTS

30 ml white rum like Bacardi white

20 ml vanilla liqueur, like Licor 43 or vanilla syrup

30 ml pineapple juice

10 ml lime cordial

10 ml lemon juice

2 – 3 pineapple chunks

Ice

Sprig of mint for garnish

 

METHOD

1. Get out your blender and put in a regular scoop of ice.

2. Pour 30ml of white rum over the ice, followed by 20ml of vanilla liqueur/syrup and 30ml of pineapple juice.

3. Then pour in 10ml lime cordial and 10ml lemon juice.

3. Add into your blender 2 – 3 pineapple chunks.

4. Blend until smooth.

5. Pour this mixture into your cocktail glass. Initially, the liquid should be evenly icy and creamy then when it settles it should separate with a crema on top.

6. Place your sprig of mint onto the crema.

ANECDOTE

The idea started with the issue that as we age drinking more than one or two Pina Coladas in a night has become gastronomically difficult.

It wasn’t that usual issue with dairy. Pina Colada doesn’t contain dairy. It’s coconut cream that brings the velvety thickness as well as stomach thickness. We both adore coconut, in all it’s heady forms, but it is one of the great dividers. Plenty of our friends can’t deal with coconut.

On the other hand, we also really love pineapple, another prominent characteristic of Pina Colada, especially it’s foaming advantage.

After nearly a year of sporadic testing and adjusting, the above recipe won out as the easiest way to get a vanilla crema floating over a tangy pine lime liquid. And hello Fool’s Gold the perfect Pina Colada alternative.
