Sting

This is our version of a chili cocktail we had in Malaysia which had quite a few more ingredients than necessary, in my humble opinion.

Our chili cocktail, Sting, made with long, red serrano chilies.
EQUIPMENT

Tumbler

Muddling implement. I use the end of a rolling pin or wooden spoon. An ordinary spoon works too.

INGREDIENTS

30-45ml Gin

1 teaspoon raw sugar

15ml lime juice

Lemon or lime wedge

Slice of fresh hot chili – green or red

Ice

METHOD

Pour gin in the glass.

Squeeze juice from the lemon or lime wedge into the glass and drop the squeezed wedge in the glass.

Put the teaspoon of raw sugar in the glass as well as the lime cordial.

Put the piece of chili in the glass.

Muddle everything in the glass thoroughly. I use the end of my rolling pin or a wooden spoon.

Fill glass with ice. Stir vigorously to melt the ice a little.

ADJUST

Add more lemon juice if you want more pep.

SERVE

Serve it in the glass you made it in.

OPTIONAL

You can serve with a swizzle stick or chopstick if you like.

You can remove seeds from the chilli. The seeds and the white membrane tend to be the hot bits.
